All ed la Estancia organic polenta is produced by the four families that own Buenaventura Farms, an Argentine farming company. the variety of corn that we use to make our polenta is very different from the corn grown in other parts of the world. Our growing season is longer than in the northern hemisphere and our sub-tropical corn is specially suited for polenta. Argentine corn is higher in protein content and much lower in starch content than common corn and can be milled to a finer consistency. Any recipe you make using de la Estancia polenta will be smooth and creamy. The words de la Estancia is Spanish mean from the farm and de la Estancia organic polenta is truly from the farmer to the final consumer. There are no middlemen. All the polenta in this bag originated on one single farm. We can trace the polenta in every bag back to the moment when the corn seeds were planted. de la Estancia polenta is not pre-cooked and is not processed but because of its low starch content and fine grind it cooks naturally in just 1 minute! What is polenta? Polenta is a word used in Italy and Latin America to mean a form of ground corn as well as a cooked dish made from the ground corn. Traditional polenta is made by adding dry polenta to simmering liquid, usually in the ratio of 3 parts liquid to 1 part polenta and stirring on the heat until the polenta reaches a consistency like thick porridge. A variety of liquids work equally well as a base, including water, chicken broth, milk, beef broth and vegetable broth. Polenta makes an excellent main meal or side dish. It absorbs sauces and juices especially well and is a substitute for pasta, cous cous and rice. Italians serve it straight from the pot with any pasta sauce they would serve with pasta. Hello. My name is Carl Mundt and I am the President of the company that produces de la Estancia organic polenta in Argentina - I'm obviously biased so you can take my comments with a grain of salt if you want.
A little more than 10 years ago, my wife and I decided to invest in the Argentine farming business. We found two young Argentine farmers to be our partners and we began to grow different crops. I also started to learn something about farming - I was especially interested in the crops themselves. After a few years I realized that the corn we were growing was quite different from the corn I was used to seeing in the US and Europe. Argentine corn is a subtropical corn called "long cycle" which meant that it grows in the fields for 6 months as opposed to the 3 month growing cycle of common corn. It was also extremely happy corn because the nights in the foothills of the Andes are cool and, besides lots of rain and hot sunshine, corn likes cool nights. This special type of corn is much harder, more vividly yellow and has both a much lower starch content and a higher protein level than corn from more temperate climates.
Putting two and two together I realized that polenta made from Argentine corn would be far superior to polenta made from common corn. It would be brighter yellow in color and it could be ground to a finer consistency. But most important, the low starch level meant that our polenta would cook in just one minute. It cooks so fast because there is basically no starch to incorporate into the cooking liquid. That is what takes so long in cooking other polentas.
I also want to emphasize that our polenta is not pre-cooked as is the case for the polenta in the tubes. Nor it is partially pre-cooked and then reconstituted as is the case for the "instant" polentas. De la Estancia polenta is pure ground corn that has never been processed or treated in any way. It just cooks fast naturally.
I hope that you enjoy preparing and serving our polenta as much as I have enjoyed bringing it to the US.

Delicious polenta, quick and very easy to cook. We enjoyed it with garlic, olive oil, basil, and sundried tomatoes, and formed the leftovers into patties the next morning which we fried in butter. A tasty, rib-sticking treat!
